No sparks. No heat. No shortcuts.
Knife sharpening in Boulder, Colorado on a water-cooled grinding wheel, stone or diamond depending on the steel. The water matters. Running the wheel slow and wet means no heat buildup at the edge, which protects the temper and hardness that makes a good knife a good knife.
Every knife goes through five to six stages of sharpening. The final stage reaches down to 1 micron, roughly equivalent to an 8,000 to 14,000 grit finish, depending on the steel. For knives that can handle it, particularly high-end Japanese blades, I'll take it further, down to 0.25 microns, roughly equivalent to 65,000 grit. That's a level of refinement most sharpening services don't come close to. Factory edges typically leave the manufacturer around 800 to 1,200 grit. That gap is what customers feel when they pick up their knives.

What I sharpen: Kitchen knives, chef's knives, Japanese knives, EDC and pocket knives, hunting knives, cleavers, scissors, sewing shears, pruners, loppers, hedge shears, hatchets, axes, machetes, and wood chisels. Ask about other items.
A note on serrated knives: I can sharpen most serrated blades with uniform, rounded scalloped serrations, which covers the majority of quality bread knives, tomato knives, and similar kitchen blades. What I can't do are knives with the smaller steak sized serrations and blades with compound serrations, the complex W and M-shaped patterns with alternating tooth sizes. Not sure which yours is?
